Ingredients
CHILI LIME BREAKFAST NACHOS
- 2 eggs
- 1 tbsp heavy cream
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup cheddar cheese
- 2 bags Quest Chili Lime Protein Chips
- ½ avocado, chopped
- ¼ cup fresh pico de gallo
- 1 tbsp green onion, chopped
- ¼ jalapeno, sliced
Method
- Turn your oven to broil.
- Prepare a small cast iron skillet with non-stick spray and turn on low heat.
- Whisk the eggs, heavy cream, salt and pepper together.
- Pour the eggs into the hot skillet and use a rubber spatula to scramble.
- Remove the eggs and add a layer of Quest Chips, scrambled eggs, half the cheddar cheese, another layer of chips and remaining cheese.
- Place the skillet in the oven for 3-4 minutes and the cheese has melted. Top with pico de gallo, avocado, jalapeno and green onion. Serve immediately.
