I have gotten so many requests over the years for vegan recipes that serve only one person. In fact, it’s on my list to write a book on this topic! I get it, when I spend periods of time on my own, the last thing I want to do is prepare a large batch for dinner and try to finish eating it over the next week. It can get so boring!
